Coleslaw recipe with Jalapeño Crema Dressing


Fantastic Fireworks Coleslaw Recipe


This coleslaw recipe is great for hot weather, just a little heat from the Jalapeno and bite of the Lime.

It screams for the forth of July, doesn't it?

This works with just about any dish at anytime and is very refreshing! We have had friends say that this is the best coleslaw they had ever had...we have a couple favorites and this is one of them.

½ head of Green Cabbage

¼ head of Red Cabbage

1 Red Bell Pepper cut fine julienne

1 Gold Bell Pepper cut fine julienne

1 Carrot peeled and grated

½ cup Cilantro chopped fine

1 bunch Green Onion sliced fine

Jalapeño Lime Crema Dressing

1 Cup Mayo

1 Cup Mexican Crema, Crème Fraiche or Sour Cream

1 Teaspoon Cumin

1 Teaspoon Salt

1 large or 2 small Jalapeños

1/8 Cup Lime juice

In a bowl mix the Mayo and Crema/Sour Cream, Cumin and Salt.

Remove the white veins and seeds from inside the jalapeño and chop roughly, place in blender. Add lime juice and blend. Pour into the bowl and stir, adjust salt and combine with salad.
