This is a great grilled potato salad recipe that has very Mediterranean flavors, all the different ingredients make this a very satisfying dish. It was our main salad in the restaurant and was before the days when garlic was popular in potato salads.
4 cups Red Potatoes diced ½ inch
1 cups Green Beans sliced julienne ½ inch long
1 cups Petit Peas blanched
1 cups Ham, thin sliced julienne
1/2 cup Ripe Olives Sliced
1 cup Roasted Red Bell Pepper diced
Aioli Dressing
3/4 cups Mayonnaise
3 cloves Garlic or 6 cloves of Roasted Garlic
1 1/2 Tablespoons Lemon Juice
1 1/2 Teaspoon Dijon Mustard
1 Tablespoon Italian Parsley chopped fine.
Salt and Pepper to taste
Blanch potatoes in salted water to tender then cool with cool running water. Blanch green beans and peas in salted water and cool with running water. Place all in a large salad bowl. Toss until just combined. Adjust salt and pepper. Chill.
